Thanks so much for writing this up--I'm inspired! I've a field full of violets (or almost), so I'm off to pick and candy some...(I hope you don't mind that I have shared your post with others via my blog).

I too love candied violets, and anything violet flavoured. They're pretty difficult to me to find locally, though, so I've been thinking about doing this. Thanks for the tips!

Mmmmm...me likey, esp. the vodka idea. You must tell us how it comes out, I've been marinating fruit, herbs and roots for a long time in vodka but never any flowers.

I had sugared pansies on my wedding cake, they were gorgeous!!!

Good job!

I just came over from the Karmic Kitchen. You and Shamu had similar ideas. I like the violet vodka cordial you're making. My father use to make something similar using grain alchol cut down with sugar water (about 50/50) and flavored with cake flavorings or spices my mom had in the pantry (cinnamon comes to mind but I'm sure there were others). That would probably work with your violets.

As to your candied violets, I'd be concerned about the raw egg white. I mean they look great, but uncooked egg left out to dry _ I don't know. The candied mint might go with ice tea maybe?
